Great food of the day: Chickpeas

Morning

Breakfast
2 cups of cheerios with 1/2 banana and 1 cup of Lactose-Free 1% Milk

Mid-Afternoon
1 snack package Eggies
- 210 cal, 9g fat, 29g carbs, 3g protein
Large black coffee

Supper
Quick Curried Chickpeas with tomatoes and brown rice
400 cal, 3.1g fat, 74.4g carbs, 18.6g protein
Everything Bagel with 2tbsp cream cheese
390 cal, 11.7g fat, 56.9g carbs, 13.2g protein

Video-Game Snack with Little Brother
1 3 Musketeers Bar
1 glass of Pepsi

I had some junk food but I kept within my limits for calories and fat.

Quick Curried Chickpeas with tomatoes
(adapted from 'Easy Chickpea Curry' VegWeb.com)

1 can of chick peas - drained
2 hothouse tomatoes - roughly chopped
1 medium onion - halved and thinly sliced
1/4 Large bell pepper - diced
garlic - minced
ginger - finely grated
chili powder
curry powder/paste
cinnamon
paprika
rosemary stalk
red wine vinegar (to taste)
1 tbsp soy sauce (optional)
organic vegetable stock - no sodium/low salt
oil - small amount
lemon juice

Heat oil in a pan and add onion, ginger, garlic, curry powder, bell pepper and fry for 2-3 minutes.

Add cinnamon, chili powder, paprika, optional soy sauce. Add enough vegetable stock to get spices off bottom of pan. Lower heat. Add chickpeas. Toss in rosemary stalk whole and add red wine vinegar. Incorporate everything together and submerge rosemary in chickpeas. Simmer for a few more minutes.

Add diced tomatoes and leave for another 10 minutes or so, stirring occasionally until chickpeas are tender.

Just before serving, add lemon juice and remove rosemary stalk.

Serve with brown rice and adjust spice/sweetness to your own taste. Taste throughout the cooking process and adjust as necessary. Serves 2.

Cravings
Haven't had any cravings for meat at all in the past few days and the craving for ice cream has subsided.

Moods
Moods have been stable all day but started getting tired around 8pm. A quick nap and I was back and ready to go. Very productive all day and feeling more refreshed on smaller amounts of sleep when necessary.

  2. Thanks for the comment! How do you feel being vegan? I doubt I could ever give up eggs and cheese, too much a part of my diet. :)
